Cooking up a storm…

With the weather gloomy and rainy outside. We have decided to bring a touch of spanish flavour into our kitchen with a different take on our favourite Paella dish.

This recipe is quick and simple to follow,with vibrant tastes,colours and textures,including the versatile spice Turmeric.

You will need..

1 tbsp olive oil.

2 chicken breasts cut into chunks.

2 small onions finely sliced.

140g cooking chorizo sliced.

1tsp paprika.

1tsp turmeric.

300g paella rice.

850mls hot chicken or vegetable stock.

200g frozen peas.

Method…

1.Heat the olive oil in a deep frying pan over a high heat.

2.Add the chicken (diced)brown all over but don’t cook completely.

Once browned transfer to a plate.

3.Lower the heat and add the onions,cook until softened~approximately 10 minutes.

4.Add the garlic stirring for one minute before adding the chorizo~fry until its oils are released.

5.Stir in paprika and turmeric, aswell as the paella rice. Coat the rice in the oil and spices then add the stock.

6.Bring to the boil, add the chicken and simmer for 20 minutes.
Stir occasionally.

7.Add the frozen peas,simmer for 5 minutes ensuring that the rice is cooked and the chicken is tender.

8.Serve and enjoy.

Why not try it in in your pancake mix, on homemade chips or even spice up your roast potatoes with a hearty sprinkle .

Who knows where this could take your taste buds~adding flavour and colour to entice even the fussiest eater.

Get the kids involved and you too could cook up a storm in the kitchen. (Just make sure they help with the washing up afterwards!).
